This is what I use for ribs (see profile pic). I don't use a tube, but I do like smoking. Just soak 2-3 cups of these chips in water, add a TBS or 2 to coals for the first 20 min for 2 hr, then every 30 min for the next 2 hr. Smoke flavor and ring occurs early while meat is coming up to temp, so smoke heavy early and taper off.

I have heard that Smoked Paprika is the healthiest way to impart smokey flavor into edibles.

It really works well for doing fish and cold smoking. Once lit, put a aluminum foil tent over it and let it do it's job. It also works well for smaller amounts of meat you want to smoke because of the slow burn rate and you don;t have to mess with it for around 4-5 hours.
