That's why they're considered "aftermarket options" Not everyone likes them, so the option market has another item to add to the list.
So we have:
Vent Shades
Car Covers
All Weather mats
Performance add ons
Color changes
Body wraps
Wood grain dash
A very long list of electronics

What else?
Right-side mounted bike-rack

Got it
Someone else in said:
High mount 3rd brake light
"Stylish" rear wheel cover
Markers/turn signals for back of front fenders
Fog lights / Marker / Turn signals for front of front fenders

What else?

Oh yeah, HUD
I've thought about a 3/4 steering wheel; the kind where the top of the wheel is chopped off and paddle shifters

Thanks for compiling this list. Maybe you will forward it to Elio when it's complete?

My addition --
an extra 12v outlet or two in the front.
A rear view camera "mirror" that will also play Google Maps via BT -- like this one -- http://navmirror.com/wordpress1/android-navigation-dvr-mirror/

That's part of the "very long list of electronics"; I'll list out the specifics when we're almost done with the list.
Can't forget the front and rear proximity sensors too.
The Nav is part of the Starz unit; which should also include the remote start and other vehicle functions, plus vehicle diagnostics.
And I'm already working on a pod cluster for the A-pillars and a reworking / replacing the Elgin dash.

So what else should we have on the list?

I see the Elio as a unique pizza delivery vehicle. I'm sure some modifications will be needed to support this concept.
A lot of previous research has been investigated RE: pizza delivery-
the facts-
"the width of the "trunk" is not wide enough for any pizza box over 14"- , that's the box, not the pizza which in P E talk is a" tall"
with a slight "tilt" a 16" ( P E is a Grande )will be at an angle that the cheese will pool towards the lowest slice.

Conclusion, skip the box and just curl up the edges of a large., or get a square pizza- problem solved
(BTW pizza is one of the most unhealthy take-out foods, i.e. fat, salt and sugar + a heap of calories

I used to deliver pizza for 2 years and I hardly used my trunk unless it was a large order. Otherwise I kept them inside with me which the back seat is perfectly suitable for.

Are there safety issues with the "aircraft yoke" type steering wheel?

If the problem is that the boxes won't go through the rear hatch and lie flat, it might work to put the seat down and load them from the door. There really has to be enough room ... certainly more than 20" wide and more than 20" deep, so you ought to be in business.

Or just install a box on the roof. Load the box, put it on the clip-mounts you've already installed. Box has a slot at the bottom and a modest spring that goes on top of the upper pizza box to keep them from bouncing -- just pull out the bottom box, deliver it, and you're on your way again!

I'm not sure what "Starz" was -- different from Skyzmatic (I hope)?
Trailing edge mud flaps for all wheels would be a nice option. I put these on my Forester and on muddy roads they did make a difference.

- Personal Dolly for that back tire? I'm not sure anyone would use it other than car transporters though.
- Trailer hitch is probably the #1 asked for option (but it'll definitely have to be aftermarket)
- Front fender reflectors or reflective tape that is tasteful or perhaps rear markers which I wouldn't want. I don't want to have to see those as I drive at night. It'd be irritating.
- Window tint (since we are talking about the option market)
