The WIC program used to teach low income parents how to make flourless peanut butter cookies to get children to eat more protein... it works:
1 cup peanut butter
1 egg
1 cup sugar

Put the cookies on a baking sheet, into the oven at 400, done in about 15 minutes. Yummy!
